Very little is needed to create a different side dish and definitely yummy … in this very cold day we propose a cheese soufflé ! bon appetit!

Ingredients for 6 persons:

gr . 200 grated Parmesan cheese

gr . 100 butter

gr . 100 flour

nr . 8 eggs

½ pint of milk

Salt, pepper and nutmeg q.b.

For the mold : Butter and flour

Procedure:

Prepare a bechamel sauce : Place the butter in a saucepan and melt over low heat. Combine the flour and cook for a few minutes, stirring constantly with a wooden spoon. Combine a little milk , stir quickly and pour all the remaining milk in one fell swoop . Add salt and pepper , to thicken over medium heat , stirring regularly , until the sauce has a creamy consistency. Remove from heat and add a little nutmeg . Combine 6 egg yolks , stir vigorously with a wooden spoon and let cool .

Combine the grated cheese at this point and 8 egg whites until stiff with a pinch of salt.

Butter the soufflé mold by sprinkling the walls of flour, pour the mixture and bake in a preheated oven 170 ° / 180 ° c . for 20 min.
